Rutabaga: fennel & anise – mid-east style.
INGREDIENTS: Rutabaga, beet, fennel, onion, white vinegar, sugar, star anise, salt.
DESCRIPTION: Traditionally this is made with turnips. I prefer to make it with a sister root vegetable that is a bit sweeter: the rutabaga. The fennel and the star anise give it that wonderful hint of licorice. With the infusion of the red beet to give it that lovely bright pink coloring.
