Sautéed pea shoots

Pea shoots are a mouthful of spring in your mouth! A wonderful characteristic of pea shoots is their fiber-ish structure. They are great as a little crunch to a salad or able stand up to being sautéed with a little butter and garlic.

My goal is to have 100g of microgreens per day. So I start my day with an over easy egg and in the same butter I add in some pea shoots. Lots of people also sauté them in buttered garlic.
