Jar Ingredients: red and green lentils, onion, coconut flakes, curry powder, turmeric, parsley, garlic, ginger, salt
1 jar Curried Coconut Lentil soup mix
7 cups broth & water
Bring liquids to a boil in large saucepan.
Stir in soup mix and bring mixture to a boil.
Reduce soup to a simmer and cook, covered, stirring occasionally for 30 mins, until lentils have softened.
Makes 4 servings.
1 Jar of mix, 1 dried chili pepper, 4 cups of water, 14-ounce can of full fat coconut milk to a saucepan. Add everything into a pot. Bring to a boil over high heat, reduce heat to low, and simmer until the lentils are tender, about 30-40 minutes. Remove and discard the chili pepper before serving. Season to taste.
