Sun Dried Tomatoes

Gently dried tomatoes, plumped in apple cider vinegar and then drenched in herbs and olive oil.

Ingredients: tomatoes, extra virgin olive oil, oregano, basil, thyme, garlic, apple cider vinegar.

Please note that there is no chemicals or preservatives. Olive oil is a natural preservatives but it is not like industrial preservatives, so additional attention is needed. If you keep all the fruit (tomatoes) submerged in the olive oil you are good. I personally keep the jar in the freezer until the day before I am going to make a dish with them. I then put them out. I use some and if there is some left I add a layer of olive oil to make sure the fruit is submerged and put it in the refrigerator until the next time I am going to use them.
