Turnip: fennel & anise – mid-east style.
INGREDIENTS: turnip, beet, fennel, onion, vinegar, sugar, star anise, salt.
DESCRIPTION: Traditionally this is made with turnips. I also like to make it with its sweeter sister root vegetable: the rutabaga. The fennel and the star anise give it that wonderful hint of licorice. With the infusion of the red beet to give it that lovely bright pink coloring.
