Onion, microgreen pesto, turkey lasagna recipe
INGREDIENTS
2 tbsp olive oil
2 large onions, thinly sliced
1 box of lasagna oven ready noodles
4 cups of cooked turkey (or 2 cups of sausage & 2 cups of sausage)
1 1/2 cups of microgreen pesto
1 package of frozen spinach, thawed, drained, chopped (or fresh microgreens)
3 cups cottage cheese
4 cups mozzarella cheese, shredded, divided.
1/2 cup of Parmesan cheese, grated, divided
4 cups of tomato sauce
DIRECTIONS
Preheat the oven to 350F. Lightly oil a 13×9 baking dish.
In a large pan, heat oil on medium. Add onions and saute for 15 mins or until onions are a gift and starting to caramelize. Set aside.
Add sausage and brown. Cut into pieces and make sure they are cooked. Cut up into small pieces. Set aside. Add cut up cooked turkey and mix.
In a bowl add cottage cheese, parmesan cheese (reserve ¼ cup for the top) and mozzarella cheese (reserve 1 cup for top) in a bowl and mix.
In the baking dish put a layer of tomato sauce then a layer of lasagna noodles.
Layer of meat, onions, cheese mix. Smooth out. Then pour on sauce. Lay a layer of noodles.
Next layer is pesto, spinach, and cheese mix smoothed out with sauce. Layer of noodles.

On the top layer sauce and the reserved cheeses.
Cover the dish with a lightly greased foil and bake it for 40 mins. Remove tin foil and bake for another 10-15 mins. Let sit for 5-10 mins. (or follow the pasta noodles baking directions)
NOTES
Around the holidays turkeys go on sale and it is a great time to create meal prep. I love to roast a turkey with the vegetables under the turkey to create the best pasta sauce. But regardless of how you make a turkey it is great to make lasagna with the leftover turkey meat.
Microgreen pesto. I love adding my microgreens to everything too. If you don’t have Glasshouse greens pesto on hand but you have fresh microgreens on hand, you can make your own microgreen pesto by adding olive oil, parmesan cheese and microgreens (fresh or frozen) to your food processor.
The ingredient measurements are approximate because I always do a big huge multi batch and put extra trays of lasagna in the freezer for future meals.
