Pesto salmon is one of my favorite fish dishes! And microgreen pesto makes it even better. This is one of the easiest dishes in the world! Four ingredients and done!
INGREDIENTS
Salmon
Microgreen pesto
Cherry tomatoes
Olive oil
INSTRUCTIONS:
Preheat oven to 350
Oil your baking dish and place the skin side of the salmon down. (you can add salt and pepper to your fish at this time (I am cutting back on salt myself)
Cover the salmon in pesto. Chop the cherry tomatoes in half and put the flat side down on the top of the fish & pesto.
Place in the middle of the oven and bake. Cook the salmon to 140-145°F (the amount of time varies depending on how thick your cut of fish is) If I don’t have a thermometer on hand I watch the tomatoes to see if they are looking a little mushy and the fish looks a little flaky.
